Early November is a great time to showcase the bounty of fall in heartier dishes that complement the cooler weather. In this season, the kitchen is a cozy, inviting place to cook sustainable, delicious food that reflects the latest thinking on good nutrition.

David Hirsch has been involved with Moosewood Restaurant for more than 35 years, and found that cooking for both health and pleasure made the creation of the Moosewood Collective cookbooks a wonderful experience. He looks forward to sharing a weekend that features the full spectrum of menu offerings. The dishes you learn to make are globally inspired and adventurous, yet not difficult, and include many vegan and gluten-free choices.

Rather than hands-on cooking by participants, this class focuses on cooking demonstrations and discussions. Come expand your repertoire of healthy meals, increase your confidence in the kitchen, and savor the opportunity to enjoy all of the foods prepared.
